I couldn't find a bleak and desaturated Reshade preset that fit my tastes. Here's the result.
Installation:
1. Download Reshade 3.0 here http://reshade.me and follow its installation instructions.
2. Download my Reshade preset and copy/paste into the C:\Program Files (x86)\Steam\steamapps\common\DARK SOULS III\Game directory.
3. Set in-game brightness to 4-6 depending on your tastes (i use 5).
4. Enjoy being blind and don't sue me.
5. Profit.
Note:
- Press 'End' to toggle DoF
- FPS drop is negligible on my system (GTX 1070 + i5-6600k @ 4.3 GHz). Results may vary.

- Messed around with Chromatic Aberration a bit to make it more pronounced.
V1.2: - Disabled FXAA to reduce blur.
- Adjusted Gaussian Blur to make it less pronounced.
- Adjusted multiple settings (tonemap, color, filmicpass) to slightly saturate the image more.
- Changed from Lumasharpen to Adaptivesharpen, and decreased strength of sharpening.
